You can add more site collection administrators to your site collection from the Site Settings page of the root web (People and Groups->Site collection administrators).
You can also do this from the Central Administration, on the Application management page, however, you can only set two site collection administrators from the Central Administration.

You can add columns to the Users Information list, just like any other list. To do so, go to the People and Groups list and then to Settings->List Settings. Any columns you add here will be available on the My Settings page for each user.
